The effect of Green Tea Extract as a natural environmentally safe oxygen scavenger has been studied. The juice of green tea was extracted using maceration method. A column chromatography packed with silica gel was used to separate different components of the juice. The oxygen scavenger species was found to be mainly in the most polar fraction. It was found that the oxygen elimination of distilled water in the presence of extract is a fast process in such a way that the dissolved oxygen concentration reduces markedly in few seconds. The oxygen scavenging efficiency was found to increase with extract content to attain 77.95% at 0.6 g/l at 25oC.
